Targeted metabolomics of anthocyanin derivatives during prolonged wine aging: Evolution, color contribution and aging prediction

Summary: This study investigated the anthocyanin derivatives and chromatic characteristics of 234 different-vintage red wines using targeted HPLC-MS/MS and CIELAB approach. The results showed that the evolution patterns of different anthocyanin derivative classes varied during wine aging. Aging tawny characteristics were related to pyranoanthocyanins, while red violet color was associated with monomeric anthocyanins and flavanol-related derivates.
