Summary: By studying the structural characteristics of slowly digestible starch (SDS) and resistant starch (RS) fractions, it was found that JFSS treated by IECT exhibited higher gelatinization temperatures and shorter amylopectin chains compared to native JFSS, resulting in a more loose and porous microstructure that was easily attacked by enzymes. The degradation of amylopectin by IECT treatment did not contribute to the formation of perfect crystals, making them more susceptible to hydrolysis than native JFSS samples.
