Preparation and biological activities of chitosan oligosaccharides

Summary: Chitosan oligosaccharides (COSs) have various beneficial biological activities and potential in disease treatment and prevention, including antimicrobial, antitumor, immunoregulatory, antioxidant, and anti-inflammatory effects. Compared to chitin, COSs have superior properties and development prospects, but the research on their preparation and mechanism of action is still not deep enough.
