Polycyclic Aromatic Hydrocarbon Profile, Chemical Composition and Acceptability of Suya (a West African Grilled Meat)

Summary: This study investigated the composition and acceptability of suya, a popular Nigerian food. The results showed that suya samples from different meat sources contained high concentrations of carcinogenic PAHs, which could pose a health risk to consumers. However, the quality indices and sensory values of the suya samples were within acceptable limits.

Assessment of Polycyclic Aromatic Hydrocarbons (PAH4) in the Traditional Lebanese Grilled Meat Products and Investigation of Broasted Frying Cooking Method and Meat Size on the PAH4 Formation

Summary: This study investigated the levels of PAH4 in traditional Lebanese meat products for the first time, finding that a significant proportion of charcoal-grilled meat samples exceeded the EU-established Maximum Residue Limits for PAH4 in smoked meat. The results also indicated that charcoal-grilled chicken had significantly higher PAH levels compared to gas-grilled and broasted fried chicken.

Effects of Doneness Level on PAH Concentrations in Charcoal-Grilled Beef and Chicken: An Egyptian Study Case

Summary: The study found that the levels of PAHs in charcoal-grilled meat and chicken were influenced by the level of doneness, with chicken having significantly higher levels of PAHs compared to beef. Well-done samples also had higher concentrations of PAHs than medium-done samples. Additionally, the intake of PAHs from grilled beef and chicken may increase the risk of cancer.

Effect of charcoal type on the formation of polycyclic aromatic hydrocarbons in grilled meats

Summary: The study evaluated the impact of different charcoal types and meat types on the formation of polycyclic aromatic hydrocarbons (PAHs), with meats grilled using extruded charcoal showing the highest levels of PAHs. Pork belly had higher levels of PAHs compared to beef loin and chicken thigh meat due to its high fat content, and there was a high correlation between charcoal and meat types.
