Summary: This study evaluates the green biomass of Jerusalem artichoke (JA) as an alternative green protein through the preparation of leaf protein concentrate (LPC) and comparison with alfalfa. The results show that JA has a higher LPC content compared to alfalfa, with similar amino acid and fatty acid profiles. Additionally, the green biomass of JA demonstrated good renewable ability and sustainability.
