This study aims to compare the biofunctional properties of wild cultivated ginseng and cultivated ginseng extracts obtained by subcritical water extraction under different conditions. The results show that increasing temperature can lead to higher phenolic concentrations, increased antioxidant activity, and peak protein content in ginseng extracts.
This study aims to compare the biofunctional properties of wild cultivated ginseng and cultivated ginseng extracts obtained by subcritical water extraction. The compounds that contribute to the biofunctional properties of ginseng extracts were analyzed by different conditions (100 degrees C/40 bar-240 degrees C/90 bar). When the temperature was increased, ginsneg extracts showed high phenolic concentrations (200 degrees C/70 bar-220 degrees C/80 bar), increased antioxidant activity, and the highest protein content after reaching 180 degrees C. Moreover, the total sugar and crude saponin content were highest at 160 degrees C. No significant difference was observed between the two samples, as both generally showed increased values at a temperature range of 180 degrees C-200 degrees C.
