The aim of this study was to analyze the effect of a magnetic field (MF) and a ferrofluid (FF) on the growth rate and cell metabolic activity of nine commercial wine yeast strains of Saccharomyces cerevisiae species. For the purposes of the current investigation, we used FF in a glass container surrounded by a cylindrical inductor resembling the stator of a three-phase asynchronous electrical engine that generated transverse rotating magnetic field (RMF). Liquid cultures of yeast were exposed to the RMF of frequency f = 50 Hz and magnetic induction B=34 +/- 0.5 mT for 1-7 hat 28 degrees C. The results obtained in this study revealed that RMF in the presence of FF can alter the growth dynamics and cell metabolic activity of the analyzed S. cerevisiae yeast strains. It was observed that exposition to RMF caused a decrease in yeast cell numbers and inhibited their cell metabolic activity. (C) 2016 Elsevier B.V. All rights reserved.
