In recent years a significant increase of possibilities of different electromagnetic spectrum parts utility for treatment and parameterization of food was observed. One of the most promising and future technology is application of Pulsed Electric Field (PEF) on raw materials and products of wide known agri-food industry. Basic essence of this method is to microorganisms cell membranes destroying and, according to this phenomena, increment of durability of products that were treated in the process. In the article basic principles of PEF technique were presented, basing on physical model tests in juices used as the workpiece. In planning of technological processes point of view, a very important factor is possibility of effective modeling and simulation of electric arc distributions within liquid workpiece. Basing on performed tests, calculating procedure of electromagnetic field distribution and arc processing were proposed for liquid juices.
