Vitamin C, carotenoids, and vitamin E, the three main dietary antioxidants, each affect lipid peroxidation and may reduce atherogenesis and lower the risk of coronary heart disease (CHD). The evidence for a cardiovascular benefit of antioxidants is strongest for vitamin E. This article examines this topic further, and the authors find that, at present, the data are insufficient to suggest public policy recommendations for nutritional supplementation.
