A new screening protocol based on electrochemical analysis is proposed to determine total polyphenolics in foods. The protocol is based on the use of a flow injection analysis system with a glassy carbon electrode. Using a wide and representative group of food samples and by comparison with a spectrophotometric protocol, the Electrochemical Index is defined as the total polyphenolic content obtained by electrochemistry. The new electrochemical protocol is introduced as alternative to traditional procedures as a new screening protocol to measure the total natural antioxidant content. (c) 2005 Elsevier B.V.
