A pure, isolated deoxyanthocyanidin, carajurin, and ethanol leaf extract of Arrabidaea chica were dissolved in solutions having five different pH values and submitted to Ultraviolet (UV) radiation and left in the dark for 24 hours. A principal component analysis was used to predict the number of species present in each solution, and ultraviolet spectra were recovered by Multivariate Curve Resolution (MCR). Solutions containing deoxyanthocyanidins present quite stable profiles in general, as compared to common anthocyanidins, which might recommend deoxyanthocyanidins and extracts rich in these compounds as potential alternative natural pigments for food and cosmetics.
