Bromelain is an enzymes that has many benefits when absorbed in intestine. However bromelain is damaged pH of the gastric, so bromelain should be coated to passing through the pH of the gastric and could be released in the intestine. Full Interpenetrating Network oh hydrogel of chitosan-poly(N-vinyl pyrolidone) is selected to encapsulate bromelain and then release bromelain in intestine. The average efficiency of post encapsulation of full-IPN hydrogel chitosan-poly(N-vinyl pyrolidone) full-IPN by Lowry method is obtained 99%. While the in vitro average disolution value of bromelain by using lowry method at pH 7,4 and at pH 1,2 and then at pH of 7,4 consecutively 24,11%, 25,8% and 13,57% respectively. Specific of the bromelain which is in vitro released at pH 7,4 is decreased 47,23%. The specific activity of bromelain is determined by using kunitz method.
