Closing the loop of cereal waste and residues with sustainable technologies: An overview of enzyme production via fungal solid-state fermentation

Summary: This study conducted a targeted review of enzyme production from cereal food waste and residues for potential utilization in the circular economy, identifying key substrates such as wheat, rice, and corn, along with enzymes like xylanase, CMCase, and FPase. The study found that xylanase from wheat bran, rice straw, and their combination showed great potential for reaching high enzyme activity and promising revenues, demonstrating the importance of scale-up experiments for industrial application. Improvements in transparency and knowledge sharing for cross-disciplinary research were also identified, including harmonized enzyme names and criteria for expressing enzyme activity per mass unit.
