Bitterness-masking peptides for epigallocatechin gallate identified through peptide array analysis

Summary: This study identified several EGCg-binding peptides using peptide array technology and found that electrostatic interaction contributes strongly to the binding mechanism. The EGCg-binding peptides identified in the study successfully suppressed the activation of the bitter-taste receptor hTAS2R39, suggesting that peptide array technology can be used to screen bitterness-masking peptides.
