Summary: This review focuses on the ability of some natural antioxidant molecules to form complexes with Al(III) and Fe(III) with the aim of evaluating their coordination properties. Further research is needed to explore the relationships between structure and properties. Investigating the coordination properties of these natural antioxidant molecules with Al(III) and Fe(III) could lead to the design of water soluble molecule-based metal carriers for improved metal intake and/or removal in living organisms.
