Pleurotus spp. Mycelia Enriched in Magnesium and Zinc Salts as a Potential Functional Food

Summary: The study aimed to determine the effect of supplementing culture media with inorganic Mg and Zn salts on Pleurotus mushrooms. The results showed that adding Zn and Mg salts increased biomass production and the bioaccumulation of inorganic salts. Maintaining in vitro cultures under optimized conditions resulted in mycelium with better composition and health properties, potentially classified as functional foods.
