Summary: The study demonstrated that Se-enriched rice protein hydrolysates (SPHs-2) have a protective effect against lead (Pb)-induced cytotoxicity, increasing cell viability and reducing Pb(2+) absorption. Selenomethionine (SeMet) in SPHs-2 played a crucial role in regulating Pb(2+) absorption by forming complexes. SPHs-2 may be a potential Pb2+-chelating peptide for developing functional food and protecting human health.

Additionally, these peptide fractions can suppress the expression of related proteins and block the phosphorylation of key signal proteins.

Effect of Sodium Selenite, Selenium Yeast, and Bacterial Enriched Protein on Chicken Egg Yolk Color, Antioxidant Profiles, and Oxidative Stability

Summary: The study demonstrated that dietary supplementation of ADS18-Se significantly improved egg yolk color, antioxidant profile of egg yolk and breast meat. Total cholesterol showed a significant decrease (p < 0.05) in fresh and stored egg yolk and breast muscle in the Se treated groups compared to the control groups. Eggs from hens fed with organic Se remained fresh for two weeks compared to inorganic Se and basal diets. Egg yolk color, antioxidant profile, and oxidative status of egg yolk and tissue were enhanced with dietary organic Se supplementation (ADS18 > Se-Yeast).

A specific selenium-chelating peptide isolated from the protein hydrolysate of Grifola frondosa

Research using iTRAQ comparative proteomics approach revealed that RLA-Se treatment led to higher Se accumulation and up regulation of E3 protein in Caco-2 cells, suggesting its potential role in cell cycle and apoptosis as an essential micronutrient.
