Comparison of coating and nano-coating of chitosan-Lepidium sativum seed gum composites on quality and shelf life of beef

Mahroo Esmaeili et al.

Summary: This study investigated the effect of composite coatings with different ratios of chitosan and Cress seed gum, as well as nano-coatings, on the shelf life of beef. The coatings with higher chitosan content and the nano-coating showed enhanced antioxidant and antimicrobial activity, leading to improved preservation of beef. The nano-coating outperformed other treatments in all experiments, reducing the growth of pathogenic bacteria below permissible limits and potentially serving as a safe preservative in active packaging for beef during refrigeration and freezing storage.
