Variation of resistant starch content in different processing types and their starch granules properties in rice

Hui You et al.

Summary: The study found that there is significant variability in resistant starch content in rice among different processing types, and different genes have different regulatory mechanisms for resistant starch content in different processing types. Strains with Waxy wildtype allele and SSIIa gene play a significant role in increasing resistant starch content.

OsMADS14 and NF-YB1 cooperate in the direct activation of OsAGPL2 and Waxy during starch synthesis in rice endosperm

Tingting Feng et al.

Summary: This study reveals the crucial role of OsMADS14 in starch synthesis in rice. Loss of function mutations in OsMADS14 lead to a shrunken and chalky grain phenotype, as well as significantly reduced total starch and amylose content in the endosperm. The study also demonstrates that OsMADS14 directly binds to regulatory regions of starch synthesis genes and interacts with the nuclear factor NF-YB1 to promote their transcription.

Impact of dietary intake of resistant starch on obesity and associated metabolic profiles in human: a systematic review of the literature

Summary: The study found that resistant starch (RS) intake did not have a direct effect on body weight and composition, and its effects on reducing energy intake, increasing satiety, and improving lipid profiles were inconsistent. However, RS intake showed beneficial effects on several blood biomarkers, indicating its potential roles in regulating blood glucose homeostasis, insulin sensitivity, and gut hormone concentrations. Further research is needed to draw conclusive results.

The origin of Wxla provides new insights into the improvement of grain quality in rice

Hao Zhou et al.

Summary: The study investigated the genetic basis of taste and eating quality in rice varieties, identifying the Wx gene as a major factor affecting these traits. A novel waxy allele, Wx(la), derived from intragenic recombination, was found to confer transparent appearance and good eating quality to rice. The study provides insights into the evolution of the Wx locus and suggests potential strategies for molecular breeding to improve rice quality.

A rare Waxy allele coordinately improves rice eating and cooking quality and grain transparency

Changquan Zhang et al.

Summary: This study identified a rare Wx allele, Wx(mw), in rice that combines favorable amylose content, improved eating and cooking quality, and grain transparency. Phylogenetic analysis suggested that Wx(mw) may have derived from recombination between two important natural Wx alleles. Experimental validation showed that Wx(mw) can improve rice grain quality, especially in high-yielding japonica cultivars.

Coordinated regulation of starch synthesis in maize endosperm by microRNAs and DNA methylation

Yufeng Hu et al.

Summary: By analyzing the transcriptome, small RNAome, and DNA methylome data from maize endosperms, a regulatory network atlas of starch synthesis was established, revealing the crucial roles of miRNAs and DNA methylation in regulating starch synthesis. The study also indicated that miRNAs act as important regulators of starch synthesis, while DNA methylation serves as a master switch for the expression of SSGs and miRNAs.

A comprehensive review of the factors influencing the formation of retrograded starch

Qing Chang et al.

Summary: The retrogradation of starch in starchy food is a natural process influenced by both internal factors like amylose and amylopectin and external factors such as processing conditions. Water plays a key role in affecting the gelatinization and retrogradation of starch, as well as serving as a conduit for the influence of other components that impact retrogradation. Three mechanisms are responsible for the formation of retrograded starch: the migration of starch molecular chains, the redistribution of water molecules, and the recrystallization kinetics of gelatinized starch.

Lichun Huang et al.

Summary: Coordinated regulation of amylose and amylopectin synthesis via manipulation of SSII-2, SSII-3 and Wx expression in endosperm can improve rice eating and cooking quality. SSII-2 plays a crucial role in regulating amylopectin biosynthesis and amylose content in rice endosperm, particularly when the activity of SSII-3 is low or lacking.

Rice varieties with a high endosperm lipid content have reduced starch digestibility and increased γ-oryzanol bioaccessibility

Yi Shen et al.

Summary: The study showed that the lipid content in rice endosperm can impact the digestibility of starch, with high-lipid white rice having the potential to lower the estimated glycemic index (eGI) and increase the content of slowly digestible starch. Additionally, high-lipid mutants also contained higher amounts of gamma-oryzanol which may be beneficial for designing functional rice-based foods.
