Evaluation of fermentation assisted by Lactobacillus brevis POM, and Lactobacillus plantarum (TR-7, TR-71, TR-14) on antioxidant compounds and organic acids of an orange juice-milk based beverage

Beatriz de la Fuente et al.

Summary: It was found that orange-juice milk beverages are a good medium for the growth of L. brevis POM and L. plantarum (TR-71, TR-14), with higher antioxidant properties observed in the fermented beverages compared to the control ones.

Thermosonication as an alternative method for processing, extending the shelf life, and conserving the quality of pulque : A non-dairy Mexican fermented beverage

Alejandra Elizabeth Alcantara-Zavala et al.

Summary: Thermosonication proved to be an effective method to improve shelf life and quality parameters of pulque, with optimal conditions extending the storage time up to 24 days at 4 degrees Celsius. Compared to conventional pasteurization, thermosonicated pulque showed higher content of lactic acid bacteria and yeasts, while preserving sensory and physicochemical properties. Identified lactic acid bacteria and yeasts in thermosonicated pulque included Lactobacillus kefiri, Lactobacillus acidophilus, Lactobacillus hilgardii, and Saccharomyces cereviasiae.

Thermosonication for the Production of Sulforaphane Rich Broccoli Ingredients

Sajad Shokri et al.

Summary: The study showed that thermosonication can enhance the yield of sulforaphane in broccoli, despite a decrease in myrosinase activity. The highest yield was achieved under the treatment of thermosonication at 60 degrees Celsius for 7 minutes, which also increased the residual level of sulforaphane, indicating the potential for converting broccoli biomass into high sulforaphane ingredients.

Ultrasound-assisted fermentation for enhancing metabolic and probiotic activities of LactoBacillus brevis

Sajad Shokri et al.

Summary: Moderate ultrasound treatments can enhance metabolic and probiotic activities of Lactobacilluse brevis, resulting in higher cell counts, growth rate, and protein hydrolysis, while also increasing GABA yield. However, higher ultrasound intensity can be detrimental to Lb. brevis, decreasing metabolic activity and GABA yield. Further studies are needed to fully understand the effects of ultrasound on Lb. brevis cells.

Effects of Cooking and Processing Methods on Phenolic Contents and Antioxidant and Anti-Proliferative Activities of Broccoli Florets

Hee Young Kim et al.

Summary: The study found that steaming and microwaving increased the total polyphenol content of broccoli florets, while steaming decreased the total flavonoid content and microwaving slightly increased it. All broccoli extracts demonstrated similar radical scavenging and cytoprotective effects. Steamed (3 min)-freeze-dried (F-S3) and microwaved (2 min)-freeze-dried (F-M2) samples showed elevated levels of L-sulforaphane and strong anti-proliferative effects in MCF-7 cells.
