Development and evaluation of novel nanofibers based on mango kernel starch obtained by electrospinning

Jaume Gomez-Caturla et al.

Summary: This work presents the development of nano fibers based on natural mango kernel starch (MKS) using the electrospinning technique. By blending MKS with polyvinyl alcohol (PVA) and polyvinylpyrrolidone (PVP), the spinnability of MKS is improved, resulting in MKS/PVA and MKS/PVP fibers. The morphology and topography of the fibers were analyzed, showing that the diameter and roughness of the fibers are relatively stable.

Influence of Sechium edule starch on the physical and chemical properties of multicomponent microcapsules obtained by spray-drying

Josefina Porras-Saavedra et al.

Summary: This study evaluated the combination of S. edule fruit starch (SS) with whey protein concentrate (WPC) and gum arabic (GA) as wall material for the encapsulation of cinnamon oleoresin by spray-drying. The results showed that the combination of SS with GA and WPC reduced the flow and rehydration properties of microcapsules. Ternary combinations demonstrated more synergy in phenolic compound retention and significantly different encapsulation efficiency.
