Diversity and dynamics of fungi during spontaneous fermentations and association with unique aroma profiles in wine

Di Liu et al.

Summary: Microbial ecology in an agricultural ecosystem influences grapevine health, crop production, and wine aroma and flavor formation. Geographic origin and grape variety significantly influence the differentiation of fungi, yeasts, and Saccharomyces cerevisiae during fermentation, ultimately shaping the wine aroma profiles. The geographic distribution of microbial communities suggests that fermentative yeast can be distinct in a local setting, with implications for sustainable agricultural practices and beverage quality.

Can we control microbiota in spontaneous food fermentation? ? Chinese liquor as a case example

Qun Wu et al.

Summary: This review focuses on the key biotechnological aspects of microbiota crucial for flavor formation in fermented foods, using Chinese liquor as a model system. Core microbiota associated with flavor formation can be identified and used to construct a synthetic microbiota, while key environmental factors affecting the core microbiota can be controlled to regulate the synthetic microbiota. Modelling can be used to predict, optimize, and control flavor compound formation by the synthetic microbiota to improve the quality, productivity, and safety of fermented foods.

Fermentation transforms the phenolic profiles and bioactivities of plant-based foods

William Leonard et al.

Summary: Phenolics are a group of compounds derived from plants that can be increased in content and nutritive value through fermentation in the food industry. Different classes of phenolics can be biotransformed by various microorganisms during fermentation, and metabolic engineering is utilized to enhance this transformation. Fermentation generally leads to a higher phenolic content and bioactivity in food, with potential for further enhancement through metabolic engineering.

Microbial diversity associated with spontaneous coffee bean fermentation process and specialty coffee production in northern Colombia

Rosmery Cruz-O'Byrne et al.

Summary: The research revealed the microbial diversity and distribution during the wet fermentation process in SNSM, Colombia, and found that the co-occurrence relationships among microbial communities have a positive impact on the sensory attributes of coffee. The study results showed that the quality of the beverages produced was influenced by the richness of fungi and the abundance of certain bacteria.

The Microbiome of the Medicinal Plants Achillea millefolium L. and Hamamelis virginiana L.

Simon Sauer et al.

Summary: The microbiome of plants, including medicinal plants, has been extensively studied in recent years. This research focused on the microbial communities of soil, rhizosphere, and above-ground organs, with limited information on seasonal development and simultaneous investigations of different plant organs. Different plant species exhibited distinct microbial communities and temporal development patterns. The core taxa of Achillea constituted a lower fraction of the total number of taxa than of the total abundance of taxa, highlighting plant-specific differences in the composition of microbial communities.
