Antibacterial efficacy of lactic acid bacteria and bacteriocin isolated from Dadih's against Staphylococcus aureus

Summary: This study evaluated the characteristics of bacteriocin from dadih's LAB and found that it has the ability to inhibit the growth of Staphylococcus aureus. Several LAB strains showed antimicrobial activity through the action of organic acids or bacteriocin. Bacteriocin strain R-55 exhibited the strongest inhibitory effect against S. aureus.
