Characterization of volatile compounds and microstructure in different tissues of 'Eureka' lemon (Citrus limon)

Summary: In this study, electronic nose and HS-SPME-GC-MS techniques were used to analyze the volatile compound content in different tissues of fresh lemon fruits. The results showed that the highest content of volatile compounds was found in the flavedo, followed by albedo, juice vesicles, and segment wall. Microstructure observation confirmed the presence of oil sacs and oil droplets only in the flavedo. These findings are important for sensory evaluation and the comprehensive processing and utilization of lemon fruits.
