Differences in bioavailability and tissue accumulation efficiency of (all-E)-and (Z)-carotenoids: A comparative study

This indicates that these foodstuffs containing Z-isomerization-accelerating compounds could enhance the health benefits of tomato extracts by promoting the formation of lycopene Z-isomers with potentially higher bioavailability and biological effects.
