Effect of water content on the physical properties and structure of walnut oleogels

Liqian Wang et al.

Summary: This study investigates the effect of water content on the properties and structure of walnut oleogels. Results show that with increased water content, the hardness of the oleogel increases and the oil loss rate decreases. Microstructure observation reveals that an increase in water content leads to an increase in crystal size and quantity.

Rheological properties of ethyl cellulose-monoglyceride-candelilla wax oleogel vis-a-vis edible shortenings

A. K. Rodriguez-Hernandez et al.

Summary: The study focused on the gelation process, elasticity, and mechanical recovery of mixed oleogels of EC, MG, and CW. The removal of crystalline fractions of raw EC by dissolving the EC/MG mixture in ethanol prior to gelation improved the texture of EC oleogels. The positive interaction between EC polymeric network, MG, and CW crystals enhanced the elasticity of mixed oleogels, showing 100% elasticity recovery after shearing. The rheological behavior of these oleogels was remarkably similar to that of commercial shortenings.

Novel lecithin-based oleogels and oleogel emulsions delay lipid oxidation and extend probiotic bacteria survival

Xiaoqing Zhuang et al.

Summary: The study aimed to develop a soy lecithin-based oleogel emulsion to entrap probiotics and enhance their viability while preventing lipid oxidation. Results showed that soy lecithin increased the survival of probiotics in the culture medium, and the oleogel emulsion delayed oxidative reactions, indicating potential for probiotic-enriched foods.

Novel pumpkin seed oil-based oleogels: development and physical characterization

Angela Borriello et al.

Summary: The study aimed to develop novel oleogels using pumpkin seed oil and natural waxes. Different percentages of beeswax and carnauba wax were evaluated in pumpkin seed oil, with carnauba wax-based oleogels showing higher viscoelastic properties and firmness. The fractal dimension of the network was comparable to widely used fats in food production, indicating potential for pumpkin seed oil in creating novel oleogels.

Ultrasound-assisted gelation of β-carotene enriched oleogels based on candelilla wax-nut oils: Physical properties and in-vitro digestion analysis

Letian Li et al.

Summary: The study showed that high-intensity ultrasound treatment can improve the physical properties, stability, and beta-carotene enrichment of wax-nut oil oleogels. Ultrasound increased the storage modulus and crystal intensity, decreased oil loss and beta-carotene degradation, and reduced the release of beta-carotene during intestinal digestion.
