Summary: Different hydrothermal treatment methods significantly affect the concentration, composition, and antioxidant activity of polyphenolic compounds in Brussels sprouts. Boiling in water is the least effective, while sous-vide cooking is the best alternative for retaining polyphenols and maintaining high antioxidant activity. In vitro digestion showed a difference between the concentration of bioavailable polyphenolic compounds and the polyphenol content in the plant material.
