Salivary nitrate/nitrite and acetaldehyde in humans: potential combination effects in the upper gastrointestinal tract and possible consequences for the in vivo formation of N-nitroso compounds-a hypothesis

Summary: After the ingestion of nitrate/nitrite and acetaldehyde/ethanol in diet, sustained exposure to nitrite and acetaldehyde may result in combination effects. These effects could affect the upper gastrointestinal tract locally and have systemic effects on the formation of N-nitroso compounds (NOC). Salivary concentrations of nitrate, nitrite, and acetaldehyde increase after ingestion, absorption, and distribution, reflecting their plasma kinetics and secretion through the salivary glands and microbial/enzymatic metabolism in the oral cavity. Combination effects in the oral cavity and upper digestive tract have not been extensively studied. This Guest Editorial reviews the evidence on exposure levels and biokinetics of nitrate/nitrite/NOx, NOC, and acetaldehyde, and identifies knowledge gaps on combination effects. Further research is needed to address these unresolved issues.

The limitation of forced ageing methods for predicting flavour stability is also discussed.

The influence of storage conditions on the chemistry and flavor of hoppy ales

Summary: Understanding the stability of hoppy beer styles such as IPAs and its impact on chemistry and sensory experience is important for brewers. A study in Germany investigated the changes in certain compounds under different storage conditions for hoppy ales and lagers. The study found that fresh ales had higher levels of aldehydes compared to lagers, and storage led to increased levels of staling aldehydes. However, the concentrations of certain hop aroma volatiles, such as terpenoids, remained stable throughout storage and counteracted oxidized impressions. In contrast, hop aroma in some ales was driven by less stable esters.

Monitoring the evolution of free and cysteinylated aldehydes from malt to fresh and forced aged beer

Summary: The study aimed to understand the origin of aldehydes in aged beer by monitoring free and cysteinylated aldehydes throughout the brewing process. While free aldehydes showed highest levels in malt, cysteinylated aldehydes increased during mashing-in. An increase in all free aldehydes was measured during beer aging, with 2-methylpropanal and furfural showing the most significant rise.

A Comprehensive Evaluation of Flavor Instability of Beer (Part 2): The Influence of De Novo Formation of Aging Aldehydes

Summary: This study focused on the de novo formation of aldehydes during aging of beer, with key precursor compounds being free amino acids. Higher malt modification levels during beer aging increased amino acid and dicarbonyl concentrations as aging precursors and Strecker aldehyde contents as aging indicators. Strecker reactions were favored during beer aging, with no alternative oxidative formation of Strecker aldehydes confirmed.
