Bioaccessibility and Gut Metabolism of Free and Melanoidin-Bound Phenolic Compounds From Coffee and Bread

Summary: The study found that phenolic compounds in coffee are predominantly present in free form, while those in bread are mainly bound to melanoidins. The bioaccessibility of free phenolics from both coffee and bread decreased during simulated digestion and gut fermentation, especially within the first 4 hours. Furthermore, the release of melanoidin-bound phenolics from coffee and bread was observed after the gastric and intestinal steps, with different patterns of release and metabolites formation identified during gut fermentation.
