Impact of Heating Temperature and Fatty Acid Type on the Formation of Lipid Oxidation Products During Thermal Processing

Summary: The thermal treatment of lipids rich in fatty acids can lead to the formation of lipid oxidation products (LOPs), which may have harmful effects on human health. This study examined the impact of heating temperature and fatty acid type on the generation of LOPs, with results showing a significant increase in LOPs with higher temperatures (100 to 200 degrees Celsius). Specifically, higher levels of certain LOPs were found in soybean oil rich in polyunsaturated fatty acids (PUFAs) compared to other oils at 200 degrees Celsius. The analysis also indicated associations between specific LOPs and fatty acid compositions, providing insights for controlling the generation of harmful LOPs.

Clustering Nuclear Magnetic Resonance: Machine learning assistive rapid two-dimensional relaxometry mapping

Summary: A new methodology using NMR relaxometry and machine learning has been introduced in this study for rapid and accurate object classification. The sensitivity and specificity of the classification are substantially improved by increasing the (pseudo)-dimensionality, such as using 2D or multi-dimensional data. This new methodology, called 'Clustering NMR', could be extremely useful for rapid and accurate object classification in less than a minute using low-field NMR.
