On the Molecular Mechanism of the Calcium-Induced Gelation of Pectate. Different Steps in the Binding of Calcium Ions by Pectate

Summary: This study investigated the initial binding of calcium ions to sodium pectate by various methods, revealing two types of bonding and determining values for Gibbs free energy. Results showed that calcium ions can induce chain association from the beginning of their addition to pectate.
