Sensory perception of guar gum-induced thickening: Correlations with rheological analysis

Summary: This study explores the relationship between the perceived thickness and ease of swallowing of guar gum dispersions with their rheological properties, finding that oral perception is linked to extensional viscosity and Trouton's ratio. The transition to the semi-dilute regime leads to changes in the Trouton's ratio, which becomes significant at concentrations above 0.75 g dL(-1). Extensional viscosity plays a more important role in perception, although both shear and extensional viscosities become important in regulating oral polysaccharide flow at higher concentrations.

Summary: Novel naturally sourced thickeners from food biopolymers have gained increasing attention in food areas, especially where edible safety of thickeners is crucial. The rheological behaviors of carboxymethylated curdlan and konjac glucomannan as potential thickeners for dysphagia were studied, showing unique viscosity enhancement abilities. However, a viscosity-lowering phenomenon was observed in konjac glucomannan solutions in the presence of maltodextrin, providing an advantage for incorporating more dietary fibers in dysphagia diets.

Summary: This study aimed to improve the functional properties of pea protein by acylation and/or conjugation with guar gum, resulting in enhanced oil and water holding capacity, emulsion capacity, and stability. Acylated and conjugated pea proteins showed synergistic effects on water holding capacity and emulsifying properties, with acetylated pea protein forming firm gels when prepared in 9% suspensions. However, in vitro gastrointestinal digestibility of modified pea proteins decreased compared to unmodified protein. Overall, acylated and conjugated pea proteins demonstrated superior functional properties for potential use as novel food ingredients in meat alternative or beverage applications.
