Inhibitory mechanism of salicylic acid on polyphenol oxidase: A cooperation between acidification and binding effects

Summary: This study found that salicylic acid plays an important role in inhibiting PPO through acidification and binding effects. As buffer concentration increased, the acidification effect decreased while the binding effect became more predominant. Additionally, salicylic acid competitively inhibited PPO, inducing changes in secondary structure.
