Summary: This study demonstrates that PpVIN2, the only vacuolar invertase gene sensitive to cold in peaches, is regulated by the cold-responsive gene PpCBF6. Overexpression of PpCBF6 decreases PpVIN2 expression and activity, leading to increased sucrose levels and enhanced chilling resistance in peach fruit. Additionally, exogenous application of methyl jasmonate (MeJA) reduces the rapid rise of PpVIN2 expression, resulting in lower VIN activity and higher sucrose content, thus reducing chilling injury in peach fruit.
