Production of Gallic Acid Under Solid-State Fermentation by Utilizing Waste from Food Processing Industries

Summary: This study evaluated the potential of using various fruit processing industry wastes to produce gallic acid via solid state fermentation with Aspergillus niger. The results showed that black plum seed powder yielded the highest amount of gallic acid, and supplementation of carbon source increased the synthesis of gallic acid. The solid state fermentation protocol developed in this study proved to be a cost-effective method for industrial production of gallic acid.
