Effect of processing on the bioaccessibility of essential minerals in goat and cow milk and dairy products assessed by different static in vitro digestion models

Summary: The study found that goat milk and dairy products have a higher bioaccessibility of calcium and magnesium compared to cow milk and dairy products. The processing of milk affects the mineral bioaccessibility, and the food structure, composition, and mineral equilibrium play a significant role in predicting in vitro digestion and bioaccessibility. Cheeses have a higher potential absorption of calcium and zinc compared to milks and yogurts, and the bioaccessibility evaluated by the solubility method is higher than that obtained by the dialysis method for all products evaluated.

Summary: Organic milk generally had higher levels of major nutrients compared to conventional milk, but lower levels of trace elements. Seasonal variations were observed in all mineral concentrations. Dietary factors, such as intake of different types of feed, played a significant role in the differences in milk mineral concentrations between organic and conventional production systems.
