Fermented Foods: Their Health-Promoting Components and Potential Effects on Gut Microbiota

Aabid Manzoor Shah et al.

Summary: Fermented foods have significant roles in various cultures and are known for their health benefits. The changes brought by microorganisms during fermentation are crucial for the stability of these foods. Recent studies have focused on the mechanisms behind the health effects of fermented foods, including the potential probiotic effects of microorganisms, production of bioactive peptides and amines, transformation of phenolic compounds, and reduction of antinutrients. Fermented products have also been associated with increased vitamin content and activities such as antioxidant, antihypertensive, and antidiabetic properties. This paper aims to discuss different types of fermented foods, the health-promoting components formed during fermentation, and the impact of fermented foods on the gut microbiome.

Peng Zeng et al.

Summary: The alkaloids from Uncaria rhynchophylla (UR) have shown promising effects in the treatment of Alzheimer's disease (AD) by targeting multiple pathological processes associated with AD, such as A beta and tau pathology. The key components identified, including corynoxine, corynantheine, and others, exert their therapeutic effects by acting on various AD-related targets. Additionally, pathways like the cholinergic synapse and dopaminergic synapse were significantly enriched, further supporting the potential of UR alkaloids in AD treatment.

Purification and characterization of immunomodulatory peptides from enzymatic hydrolysates of duck egg ovalbumin

Ping He et al.

Summary: Duck egg white (DEW) is explored as a source of immunomodulatory peptides, with papain hydrolysate (PH) showing high hydrolysis degree and strong activity. Among the nine identified peptides, five exhibit strong activity, with TQIDKVVHFDKLPGF peptide showing the highest immunomodulatory activity. Molecular docking results suggest good affinity between these peptides and toll-like receptor 2 and 4, with three selected peptides forming stable bonds contributing to their immune activity.
