Principles, Application, and Gaps of High-Intensity Ultrasound and High-Pressure Processing to Improve Meat Texture

Summary: In this study, the effects of emerging non-thermal technologies, high-intensity ultrasound (HIUS) and high-pressure processing (HPP), on meat tenderization were evaluated. It was found that sonication time of 2-20 minutes is optimal for HIUS, and HPP is beneficial at 200-250 MPa and 15-20 minutes. However, there are still unknown physicochemical, microstructural, and sensory alterations and barriers hindering the industrial application of NTT.

However, due to their composition, muscle foods are prone to oxidative degradation, which can negatively impact their quality. Protein oxidation reactions in muscle foods have received less attention compared to lipid oxidation, but understanding and controlling these reactions are vital for the food industry. This review focuses on the mechanisms, factors, and analytical methods related to protein oxidation, as well as the effects of protein oxidation on the physicochemical and nutritional aspects of muscle foods.

What Do Consumers Think About Foods Processed by Ultraviolet Radiation and Ultrasound?

The study highlights the need for clear and trustworthy information before introducing these products to the Brazilian market.
