Evolution of monovarietal virgin olive oils as a function of chemical composition and oxidation status

Summary: This study investigated the changes in fatty acid profile, phenolic composition, and quality parameters of nine Italian monovarietal Virgin Olive Oils (VOOs) stored for 12 months, and found that varieties with medium-high concentrations of secoiridoids and balanced values between the individual molecules had the highest stability. Additionally, oleuropein derivatives and phenolic alcohols were found to have the highest antioxidant activity.

Subzero Temperature Storage to Preserve the Quality Attributes of Veiled Virgin Olive Oil

Effect of storage time and conditions on the quality characteristics of 'Moroccan Picholine' olive oil
