Characterisation of chemical, microbial and sensory profiles of commercial kombuchas

Summary: The kombucha market is growing rapidly and offers a wide range of options, including traditional and flavored kombuchas. This research focused on analyzing the chemical, microbial, and sensory profiles of commercial kombuchas. The study revealed that the dominant metabolites in kombucha are acetate, lactate, and ethanol, with some kombuchas potentially being classified as alcoholic beverages in certain countries. Metagenomic analysis showed that green tea kombuchas are dominated by lactic acid bacteria (LAB), while black tea kombuchas are dominated by acetic acid bacteria (AAB). The main bacterial species identified were Komagataeibacter rhaeticus and Lactobacillus ssp, and the yeast species were Dekkera anomala and Dekkera bruxellensis. The sweetness and sourness of kombucha were found to be correlated with acid concentrations. In terms of flavor, commercial kombuchas were categorized into three main groups: fruity and artificial flavors, herbal and tea notes, and classical notes. This research highlights the importance of defining kombucha.
