Online quantitative substrate, product, and cell concentration in citric acid fermentation using near-infrared spectroscopy combined with chemometrics

Sai Jin et al.

Summary: In this study, near-infrared spectroscopy combined with chemometrics methods was used to quantify the substrate, product, and cell concentration of citric acid fermentation online. The results showed that the intelligent stacked auto-encoder (SAE) model had advantages in predicting the concentration of complex components.

Simultaneous class-modelling in chemometrics: A generalization of Partial Least Squares class modelling for more than two classes by using error correcting output code matrices

O. Valencia et al.

Summary: This paper presents a new methodology called PLS2-CM, which aims to improve the performance of class-modelling in a setting with more than two classes. The methodology uses multi-response PLS models with classes encoded via Error-Correcting Output Codes (ECOC) instead of traditional class indicator variables. The proposed approach decomposes the class-modelling problem into a series of binary learners based on different code matrices and evaluates them to obtain the best performing compliant class-models. The application of PLS2-CM to various cases shows enhanced class-modelling performance.

Quantitative analysis and visualization of moisture and anthocyanins content in purple sweet potato by Vis-NIR hyperspectral imaging

Xiao-Yu Tian et al.

Summary: This study investigated the changes in MC and TA content of processed purple sweet potatoes using hyperspectral imaging and established models for prediction. The results showed that the TA content in PSPs processed by microwave drying was higher than that by convective hot-air drying, but the distribution uniformity of TA in microwave dried samples was worse.

Staling of white wheat bread crumb and effect of maltogenic α-amylases. Part 3: Spatial evolution of bread staling with time by near infrared hyperspectral imaging

Jose Manuel Amigo et al.

Summary: This study explores how the staling of white bread is affected by the addition of maltogenic alpha-amylases using near infrared hyperspectral imaging and machine learning techniques. It demonstrates how the constituents of the bread evolve differently under different conditions and identifies which parts of the crumb are primarily affected. This paper proposes a comprehensive methodology for studying white bread staling.

Monitoring of dough fermentation during Chinese steamed bread processing by near-infrared spectroscopy combined with spectra selection and supervised learning algorithm

Xianhui Chang et al.

Summary: This study developed an intelligent method for monitoring dough fermentation using NIR spectroscopy technology. Two monitoring models, KNN and SVM, were established, with SVM showing superior performance. The results indicated that this method can replace assessor judgment and achieve rapid online monitoring of dough fermentation.
