Purple Wheat: Food Development, Anthocyanin Stability, and Potential Health Benefits

Summary: Colored wheats like black, blue, or purple wheat have gained significant interest as health-enhancing food ingredients. Purple wheat, being anthocyanin-pigmented, has enormous potential in food applications. It is currently processed into foods with potent antioxidant properties, although more research is needed to understand its health benefits in humans. Various stabilization methods have been proposed to prevent the loss of anthocyanins during food processing. This review provides insights on the development of purple wheat food products and its impact on human health, along with a brief discussion on methods for stabilizing anthocyanins.

Complexation with Polysaccharides Enhances the Stability of Isolated Anthocyanins

Summary: To improve the stability and bioavailability of anthocyanins, four different polysaccharide complexes were used in this study. Results showed that pectin had the best complexation capacity and increased the stability of anthocyanins under simulated digestion and high pH and temperature conditions. The anthocyanin-pectin complex also restored cell permeability.

Olive pectin-chitosan nanocomplexes for improving stability and bioavailability of blueberry anthocyanins

Summary: Nanocarriers for blueberry anthocyanins (ANCs) were constructed using chitosan (CS) and olive pectin (PC) through an electrostatic self-assembly method to improve their stability. The nanocomplexes had a nanoscale particle size of 81.22 +/- 0.44 nm, with an encapsulation efficiency of 91.97 +/- 0.33% at pH 3.0 and a CS: ANCs: PC ratio of 1:1:5 (m/v). The CS-ANCs-PC showed better scavenging activities, environmental stability, and targeted release in vitro digestion compared to free anthocyanins. This study provides a fundamental basis for enhancing the stability of anthocyanins in the blueberry industry.

Interactions of 3-deoxyanthocyanins with gum arabic and sodium alginate contributing to improved pigment aqueous stability

Summary: This study compared the ability of gum arabic and alginate to stabilize 3DXA in aqueous systems and found that they had different stabilizing effects on different 3DXA pigments. Gum arabic formed stable complexes with 3DXA through hydrophobic encapsulation, while alginate stabilized the pigments through viscosity and hydrogen bonding. The structure of 3DXA plays a critical role in its interaction with hydrocolloids, and must be considered when selecting stabilizing polysaccharides.

Development and comparison of different polysaccharide/PVA-based active/intelligent packaging films containing red pitaya betacyanins

Summary: This study looked at blending betacyanin-rich red pitaya flesh extract with different polysaccharides and polyvinyl alcohol matrices to create active/intelligent packaging films. The properties of the films, such as color, light transmittance, tensile strength, and water vapor permeability, were influenced by the type of polysaccharides used. Locust bean gum/PVA-RPFE film demonstrated the highest color and antioxidant stability, while effectively indicating the freshness of shrimp.

Summary: The study encapsulated anthocyanins (ACNs) in nanocomplexes with chitosan hydrochloride (CHC), carboxymethyl chitosan (CMC), and whey protein isolate (WPI), forming ACN-CHC/CMC-WPI nanocomplexes with excellent stability and sustained release properties. These nanocomplexes can enhance the protective effect of ACNs in food products, exhibiting improved stability at high temperature and in simulated gastrointestinal fluids.

Summary: Anthocyanins are valuable biocompounds that are being increasingly extracted globally, but their functional applications are limited by environmental stability. Research on the thermal stability of anthocyanins has shown that crude extracts are more thermally stable than purified extracts, and interactions with nutrients can affect their behavior during thermal processing. Stabilization of anthocyanins through linkages to other molecules has shown promise for developing stable functional products in the future.
