Changes in interfacial composition and structure of milk fat globules are crucial regulating lipid digestion in simulated in-vitro infant gastrointestinal digestion

Summary: This study analyzed and compared the interfacial phospholipid and protein compositions of fat globules in human milk and three different infant formulas. The changes in interfacial composition and structure during in-vitro infant gastrointestinal digestion were also evaluated. The results showed that F1, which had similar interfacial phospholipid composition as human milk and a phospholipid layer on the surface of triglyceride, exhibited similar lipolysis and proteolysis properties as human milk. This study highlights the importance of simulating the molecular level and structural features of human milk fat globules in understanding digestion behavior.

Interfacial composition in infant formulas powder modulate lipid digestion in simulated in-vitro infant gastrointestinal digestion

Summary: The interface structure and composition of fat globules play a crucial role in the digestion, metabolism, and growth of infants. This study analyzed the effects of supplementation of milk fat globule membranes (MFGM) and lecithin on the interface composition of infant formula (IF) and evaluated their impact on fat digestion properties. The findings showed that Concept IF1 and Concept IF2 had a more similar interface composition to human milk (HM) compared to conventionally processed IF3. Concept IF2 had the highest degree of lipolysis and released a fatty acid composition more similar to HM. Changes in the interfacial composition and structure of fat globules can improve the digestive properties of fats in IF.

Evaluation and regulation of these substitutes in infant formula are also important.

Comparative analysis of interfacial composition and structure of fat globules in human milk and infant formulas

Summary: The study analyzed and compared fat globule interfacial compositions and structures in human milk and three types of infant formulas (IF1, IF2, IF3). While IF1 was closer to human milk in terms of interfacial protein composition, it still lacked certain important bioactive proteins. Differences were also found in interfacial phospholipids between human milk and infant formulas, with IF1 having the closest composition. However, the study concluded that despite the inclusion of MFGM, infant formulas did not replicate the fat globule structures found in human milk.

The results showed that the triglyceride and fatty acid composition varied significantly among different milk samples. Infant formula supplemented with 1,3-olein-2-palmitin regulated the immunity, gut microbiota, and metabolites of mice colonized by feces from healthy infants

Summary: This study examined the effects of 1,3-olein-2-palmitin (OPO) in infant formula on the immune system, gut microbiota, and metabolites in mice. The results showed that OPO had comparable effects to human milk on IL-9, IL-10 levels, fecal secretory IgA, and endotoxin. OPO also slightly increased the content of short-chain fatty acids. The analysis of gut microbiota and metabolites revealed that different foods had an impact on the gut microbiota composition and metabolites' differences were regulated by the gut microbiota.

Synthesis of human milk fat substitutes based on enzymatic preparation of low erucic acid acyl-donors from rapeseed oil

Summary: In this study, it was found that Candida cylindracea lipase (CCL) has a strong ability to discriminate against erucic acid, which can reduce its content in rapeseed oil. The free fatty acids obtained from rapeseed oil can be used as raw materials for the synthesis of human milk fat substitutes through acidolysis catalyzed by Novozym 40086. The synthesized human milk fat substitute is similar to human milk fat.

The resulting MLCTs-riched SLs have preferable physical properties compared to the original algal oil.

The effect of adding phospholipids before homogenization on the properties of milk fat globules
