Effect of Ginkgo Biloba Powder on the Physicochemical Properties and Quality Characteristics of Wheat Dough and Fresh Wet Noodles

Summary: The effects of ginkgo biloba powder (GBP) on the properties and quality of dough and fresh wet noodles were investigated. The addition of GBP resulted in changes in the chemical and physicochemical properties of the dough and noodles, including improved water absorption, reduced aging of starch, and enhanced thermal stability. Scanning electron microscopy showed that GBP addition resulted in a smoother surface and larger hole size of the noodles. The addition of GBP significantly increased the chewiness and extensibility of the noodles, and decreased their digestibility and estimated glycemic index (eGI) values. Overall, adding 20% GBP improved the texture, taste, and nutrition of fresh wet noodles, making it a potential ingredient in the noodle industry.

Some plant-derived natural products, including curcumin, resveratrol, catechin, soy protein, and ginseng, have been shown to have beneficial effects on sarcopenia without significant side effects.

Effect of Interphase Properties on Isothermal and Non-isothermal Crystallization Behavior of Poly(lactic acid)/Acetylated Starch Blends

Summary: The effect of interphase properties on the crystallization behavior of blends of poly(lactic acid) (PLA)/acetylated starch (AS) with different degrees of substitution (DSs) was investigated. It was found that the crystallization rate varied for different DSs of AS in the PLA/AS blends under isothermal and non-isothermal conditions. The interphase properties and thickness played a role in interrupting crystallization, while hydrogen bonding and hydrophobic interactions facilitated crystallization under non-isothermal conditions.
