Comparative Study of Chemical Composition, Pasting, Thermal and Functional properties of Teff (Eragrostis tef) Flours Grown in Ethiopia and South Africa

Summary: This study compared the chemical composition and functional properties of whole grain teff flours grown in Ethiopia and South Africa and found significant differences in several attributes between the two types. The teff flour from Ethiopia had higher calcium and iron content, while the teff flour from South Africa had higher protein and zinc content. Additionally, the two flours showed variations in foam stability, water absorption capacity, and swelling power.

Summary: The food industry often generates waste and by-products that are not fully utilized. Press cakes, which come from oilseed extraction, have nutritional value, high biopolymer content, and bioactive phytochemicals. Gluten-free breads commonly have texture issues, low nutritional value, and short shelf life, so there is a demand for natural additives containing proteins and hydrocolloids to enhance their value. This study used flaxseed by-product extract to replace water in gluten-free bread formulations and found that it improved the nutritional value, antioxidant properties, and sensory features of the bread.
