Dependence of degradation of anthocyanins on non-uniformity of microwave heating in blueberry puree

Summary: The study investigated the effects of temperature and moisture distribution on the degradation of anthocyanins in blueberry puree during microwave heating. Parameters such as temperature dispersion value, moisture dispersion value, temperature contrast value, highest temperature, and hot zone distribution were used to evaluate the heating uniformity. The Weibull model was able to characterize the distribution of anthocyanins content in blueberry puree based on temperature and moisture. The degradation of anthocyanins highly depended on the non-uniformity in hot zone distribution, highest temperature, and temperature dispersion inside blueberry puree during microwave heating. These findings can guide the quality control of berry products during microwave processing.

Summary: This study demonstrates that the use of Aloe vera gel with lemongrass essential oil as an edible coating significantly enhances the shelf life of strawberries. The combination of 40% Aloe vera gel and 1% lemongrass essential oil showed the best preservation effect, maintaining fruit firmness and acidity while increasing total soluble solids and total anthocyanins. The treated fruits also exhibited lower weight loss and decreased microbial growth compared to the control group.
