Detection of mycotoxins in cheese using an optimized analytical method based on a QuEChERS extraction and UHPLC-MS/MS quantification

Occurrence of aflatoxin M1 in milk and exposure estimation for its consumption in the Chilean population

Summary: The aim of this study was to estimate the occurrence of aflatoxin M1 (AFM1) in milk and the exposure to aflatoxin from milk consumption in different age groups in Chile. The study found that 42% of the milk samples tested positive for AFM1, with an average level of 7.5 ng/L. The occurrence of AFM1 was higher in infant formulas (63%) compared to milk for general consumption (23%). The study concluded that AFM1 poses a health risk to children aged 0-13 years, especially infants, and recommended special regulations for infants and young children based on local risk assessments.

Impacts of unit operation of cheese manufacturing on the aflatoxin M1 level: A global systematic review and meta-analysis

Summary: This study found that during the manufacturing of cheese, AFM1 levels increased in cheese compared to milk, but decreased in whey. The increase in AFM1 levels varied among different types of cheese, with hard cheese showing the highest increase. Additionally, a significant reduction in AFM1 levels was observed after the ripening/storage period, particularly in cheese made from milk with starter culture.
