A pH-driven method for liposomal encapsulation of dietary flavonoid rutin: Sustained release and enhanced bioefficacy

Summary: In this study, a pH-driven method was developed to prepare rutin-loaded liposomes, and their characteristics were evaluated. Encapsulated rutin showed significant inhibitory effects on HeLa cells with an IC50 value of 250 μmol/L, while free rutin had little effect. The bioaccessibility of rutin was enhanced from 9.8% to 19.7% upon liposomal encapsulation. The release of encapsulated rutin was significantly slower compared to free rutin, demonstrating sustained release. Overall, the approach of preparing rutin-loaded liposomes showed enhanced bioaccessibility, reduced cell viability, and sustained release.

Encapsulation for Improving in Vitro Gastrointestinal Digestion of Plant Polyphenols and Their Applications in Food Products

Effect of thermal treatment on the molecular-level interactions and antioxidant activities in β-casein and chlorogenic acid complexes

Hydrophobic interaction driving the binding of soybean protein isolate and chlorophyll: Improvements to the thermal stability of chlorophyll

Summary: This study investigated the effects of soybean protein isolate (SPI) on the thermal stability of chlorophyll (Chl) and found that the addition of SPI improved Chl stability through hydrophobic interactions. Fluorescence spectra showed a strong affinity between SPI and Chl, with a lower polydispersity index (PDI) values and particle size in Chl-SPI mixtures, indicating a more stable molecular weight distribution. Molecular modeling revealed the important role of Mg2+ and the phytol residue from Chl in binding with SPI, enriching our understanding of the interaction mechanisms for the development of plant-derived protein products with stable green color.
