Rapid quality control of black truffles using Direct Analysis in Real Time Mass Spectrometry and Hydrophilic Interaction Liquid Chromatography Mass Spectrometry

Summary: This study is the first to apply Direct Analysis in Real Time Mass Spectrometry for rapid and simple quality control of black truffles. Multivariate analyses of mass spectra provided highly efficient models for discriminating four truffle species. The results showed that Direct Analysis in Real Time Mass Spectrometry, although having slightly lower prediction accuracies compared to the reference method, was significantly faster, more robust, and easier to use.

Food authentication: truffle species classification by non-targeted lipidomics analyses using mass spectrometry assisted by ion mobility separation

Summary: Truffles are highly valued for their unique aroma and limited availability, making them a valuable and expensive food. The adulteration of inferior truffle species as more expensive varieties poses a significant challenge in the truffle market. In this study, a non-targeted lipidomics approach was developed using ion mobility spectrometry-mass spectrometry to distinguish between different species of white truffles (Tuber magnatum and T. borchii) and black truffles (T. melanosporum, T. aestivum, and T. indicum). By identifying specific marker compounds, it was possible to accurately differentiate between black and white truffle species, providing a potential tool for rapid on-site truffle analysis.
