Isoflavone Changes in Immature and Mature Soybeans by Thermal Processing

Summary: This study investigated the changes in isoflavone profiles of immature and mature soybeans during thermal processing. It found that wet-heating led to more severe deglycosylation of malonylglycoside forms of isoflavone, while dry-heating produced relatively low amounts of acetyl types in immature soybeans. Acetylglycoside forms of isoflavone were significantly affected by water content in the soybeans, leading to the greater production of acetyl isoflavones after dry-heating regardless of seed maturity.
